Some cooks must have a chinois because it works well and is the professional’s choice. If you have no such attachment, save money and space by going with the rounded mesh sieve. Another use for the rounded sieve is to run previously strained stock through a sieve line with cheesecloth or flattened coffee filters to clear fat and small particles. 


Shopping tip: 

Match sieves with bowls for different jobs. If the sieve follows the line of the bowl closely the pair can be used as a bath for herbs and greens that require soaking to get grit and sand off. If the sieve sits above the bowl there is space for the liquid to be separated from the solids. Either option is handy when the sink is otherwise occupied.
